For the crust:
500 g 00 flour
1 1/4 cup lukewarm water
2 tsp yeast
1 tsp sea salt
Add flour, yeast & salt to a bowl.
Make a hole and pour the lukewarm water.
Mix with a spoon until the dough starts holding together then continue with your hands.
Lightly add flour onto a clean surface and knead your dough for 10 mins, adding love and positive thoughts.
Place your dough in a clean bowl and cover with a towel.
Let the dough rest & rise for an hour or so.
When the dough is double the volume, it is ready to use.
Divide into 4 parts.
Roll each one on a clean surface to form a pizza shape crust.
Let them rest, covered with a towel for 20 mins.
Meanwhile prepare the tomato sauce.
Ingredients: - 6 cloves of garlic, crushed with a pinch of sea salt - 2 tbsp avocado oil
- 3 cups of strained tomato - 3 tbsp tomato paste
- 1 tbsp brown rice syrup - 1 tsp sea salt - Black pepper to taste
Heat the oil on medium heat until shimmered, add the crushed garlic and sauté briefly (seconds) then add the tomato purée and sea salt, bring to a boil and add the tomato paste, brown rice syrup & black pepper.
Bring to a boil again and let simmer on low heat for 30 mins.
The sauce will be thick & condensed.
Preheat oven at 450F.
Add 2 to 3 tbsp of tomato sauce to your rolled pizza dough, top with vegan mozzarella cheese, fresh sliced mushrooms & pitted black olives.
Transfer your pizzas to a baking tray lined with parchment paper.
Bake your pizzas for 15 to 20 mins or until the crust is golden brown.
Top with fresh basil leaves.
